Chef Nathaniel Reid's Strawberry Milkshake
Ingredients:
- 1¼ cup Prairie Farms Whole Milk
- 1 cup Prairie Farms Heavy Whipping Cream
- ¼ cup Brown Sugar
- 4 Large Egg Yolks
- ½ Half Vanilla Bean split & scraped
- ½ pint Fresh Strawberries
- 2 tbsp Powdered Sugar
- ¼ Fresh Lemon juiced
- Whipped Cream topping, optional
- Fresh Berries topping, optional
Directions:
- In a medium saucepan, heat 1 cup whole milk, heavy cream, and vanilla over medium-high heat until simmering. Reduce heat to low.
- Meanwhile, whisk the egg yolks and sugar together vigorously until well mixed
- While whisking, slowly pour half of the simmering milk mixture into the egg yolk mixture.
- Pour the egg yolk mixture back into the saucepan and stir over low heat until 185ºF and thickened slightly.
- Immediately pour the mixture into an ice cube tray and place in the freezer.
- Remove the stem and leaves from the strawberries and place in a blender with lemon juice and powdered sugar. Puree and strain before chilling in the refrigerator until cool.
- Add the frozen vanilla cream, chilled strawberry sauce, and 1/4 cup milk to a blender. Blend until smooth, adding additional milk as needed until the texture is to your liking.
- Pour into a milkshake glass and optionally top with whipped cream and fresh berries. Enjoy!
