Chef Nathaniel Reid's Strawberry Milkshake

Ingredients:

  • cup Prairie Farms Whole Milk
  • 1 cup Prairie Farms Heavy Whipping Cream
  • ¼ cup Brown Sugar
  • 4 Large Egg Yolks
  • ½ Half Vanilla Bean split & scraped
  • ½ pint Fresh Strawberries
  • 2 tbsp Powdered Sugar
  • ¼ Fresh Lemon juiced
  • Whipped Cream topping, optional
  • Fresh Berries topping, optional

Directions:

  • In a medium saucepan, heat 1 cup whole milk, heavy cream, and vanilla over medium-high heat until simmering. Reduce heat to low.
  • Meanwhile, whisk the egg yolks and sugar together vigorously until well mixed
  • While whisking, slowly pour half of the simmering milk mixture into the egg yolk mixture.
  • Pour the egg yolk mixture back into the saucepan and stir over low heat until 185ºF and thickened slightly.
  • Immediately pour the mixture into an ice cube tray and place in the freezer.
  • Remove the stem and leaves from the strawberries and place in a blender with lemon juice and powdered sugar. Puree and strain before chilling in the refrigerator until cool.
  • Add the frozen vanilla cream, chilled strawberry sauce, and 1/4 cup milk to a blender. Blend until smooth, adding additional milk as needed until the texture is to your liking.
  • Pour into a milkshake glass and optionally top with whipped cream and fresh berries. Enjoy!
