Victory Lane Ice Cream Cake
Red, white, and blue ice cream cake layered with ice cream sandwiches, homemade whipped cream, and fresh berries. A festive, no-bake dessert for celebrations.
Ingredients:
- 24 Prairie Farms Ice Cream Sandwiches
- 3 cups Prairie Farms Heavy Whipping Cream
- 1/2 cup powdered sugar
- 2 tsp vanilla extract
- 1½ cups fresh raspberries
- 1½ cups fresh blueberries
Directions:
- Make Whipped Cream: In large bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Chill bowl and beaters first for best results.
- Layer Base: Line 9x13 baking dish with single layer of ice cream sandwiches (cut to fit if needed).
- First Cream Layer: Spread half of the whipped cream evenly over sandwiches.
- Second Layer: Add another layer of ice cream sandwiches.
- Final Cream Layer: Spread remaining whipped cream evenly over top.
- Freeze: Cover and freeze minimum 4 hours, or until firm.
- Decorate: Place blueberries in corner for stars and arrange raspberries in rows for stripes.
- Serve: Slice and serve immediately. Keep frozen until ready.
