Double Cheese Mashed Potatoes
Mashed Potatoes are the way to many a heart, but add cheese to them and that heart will be yours forever! This Double Cheese Mashed Potato Recipe will quickly become a family favorite on those homestyle, meat-and-potatoes nights.
Ingredients:
- 5 large baking potatoes
- 1 cup finely shredded Mexican cheese blend
- 1/2 cup chopped green onion
- 1 cup Prairie Farms Sour Cream
- 1 cup Prairie Farms Cottage Cheese
- 1/4 cup Prairie Farms Butter melted
- 1 tsp salt
- 1/2 tsp pepper
Directions:
- Peel, dice and wash potatoes. Cook potato cubes in boiling water until tender; drain.
- In large bowl, mash potatoes. Add remaining ingredients and blend well.
- Spray 3-quart casserole or 9" x 13" baking dish with non-stick spray.
- Pour potatoes into casserole dish and bake at 350 °F for 20 to 25 minutes or until top starts to brown slightly.
