Baked mashed potatoes with browned, melted cheese in a white dish

Ingredients:

  • 5 large baking potatoes
  • 1 cup finely shredded Mexican cheese blend
  • 1/2 cup chopped green onion
  • 1 cup Prairie Farms Sour Cream
  • 1 cup Prairie Farms Cottage Cheese
  • 1/4 cup Prairie Farms Butter melted
  • 1 tsp salt
  • 1/2 tsp pepper

Directions:

  • Peel, dice and wash potatoes. Cook potato cubes in boiling water until tender; drain.
  • In large bowl, mash potatoes. Add remaining ingredients and blend well.
  • Spray 3-quart casserole or 9" x 13" baking dish with non-stick spray.
  • Pour potatoes into casserole dish and bake at 350 °F for 20 to 25 minutes or until top starts to brown slightly.
