Ingredients:

Filling

  • 2 cups Prairie Farms Sour Cream
  • 4 tbsp flour
  • 3/4 tsp almond extract
  • 2 eggs
  • 1 cup sugar
  • 1/2 tsp salt
  • 3/4 cup dried apricots, stewed, drained and cut into pieces (be sure to use dried apricots, not canned)

Topping

  • 1/2 cup light brown sugar
  • 1/3 cup flour
  • 1/4 cup unsalted Prairie Farms Butter

Other ingredients

  • Cool whip
  • Pie shell

Directions:

  • Beat sour cream, flour, almond extract, eggs, sugar and salt well.
  • Fold in apricots.
  • Pour into unbaked pie shell.
  • Bake at 400 °F for 25 minutes.
  • Remove from oven and immediately sprinkle topping over pie and return to oven to bake 20 minutes longer.
  • Chill in refrigerator. Serve with whipped cream.
