Cajun Shrimp and Grits

This classic Southern dish is full of flavor and so easy to make. Prairie Farms Whole Milk and Pepper Jack Cheese make the perfect cheesy grits to go with these cajun spiced shrimp.

Ingredients:

Cheesy Grits

  • 3 cups Chicken Broth
  • 1 tbsp Prairie Farms Butter
  • ½ tsp Kosher Salt
  • 1 cup Quick Grits
  • 1 cup Prairie Farms Whole Milk
  • ¾ cup Prairie Farms Pepper Jack Cheese shredded

Shrimp & Gravy

  • 4 slices Bacon
  • 1 lb. Shrimp
  • 1 tsp Seafood Seasoning
  • Salt & Pepper to taste
  • ½ cup Yellow Onion diced
  • 3-4 Garlic Cloves minced
  • 2-3 Bell Peppers diced, any variety
  • 2 Roma Tomatoes chopped
  • cup Chicken Broth
  • 1 tsp Cajun Seasoning adjust to your taste.
  • ½ Whole Lemon

Directions:

Make Grits

  • In a medium-sized pot, combine broth, butter and salt. Bring to a boil.
  • Once boiling, gradually add the grits while stirring constantly. Bring heat to low and cook until liquid is absorbed, about 15-20 minutes, stirring frequently.
  • Remove pot from heat. Add milk and shredded Pepper Jack Cheese. Stir until completely incorporated, grits should be thick and creamy by this stage. Set aside to cool.

Make Shrimp & Gravy

  • Preheat a large skillet over medium heat. Add bacon and cook until crisp. Remove bacon from pan and set aside.
  • Add the shrimp, seafood seasoning, and salt and pepper. Stir to coat shrimp. Cook until shrimp is pink, about 2-3 minutes on both sides. Remove cooked shrimp from skillet and set aside.
  • Add diced onions, garlic, and bell peppers. Cook until soft and fragrant.
  • Add chopped tomatoes and chicken broth to deglaze the pan. Add cajun seasoning and juice of half a lemon. Stir in bacon bits and shrimp. Serve over grits and enjoy!
