Moms Gourmet Apricot Pie
Apple, cherry and blueberry usually get all the glory when it comes to fruit pies. But Mom's Gourmet Apricot Pie is in a category all by itself!
Ingredients:
Filling
- 2 cups Prairie Farms Sour Cream
- 4 tbsp flour
- 3/4 tsp almond extract
- 2 eggs
- 1 cup sugar
- 1/2 tsp salt
- 3/4 cup dried apricots, stewed, drained and cut into pieces (be sure to use dried apricots, not canned)
Topping
- 1/2 cup light brown sugar
- 1/3 cup flour
- 1/4 cup unsalted Prairie Farms Butter
Other ingredients
- Cool whip
- Pie shell
Directions:
- Beat sour cream, flour, almond extract, eggs, sugar and salt well.
- Fold in apricots.
- Pour into unbaked pie shell.
- Bake at 400 °F for 25 minutes.
- Remove from oven and immediately sprinkle topping over pie and return to oven to bake 20 minutes longer.
- Chill in refrigerator. Serve with whipped cream.
