Baked Spicy Avocado Fries With Chipotle Sauce
Ingredients:
Avocado Fries
- 4 Tbsp Canola oil
- 2 Cups Panko breadcrumbs
- 1 tsp chili powder
- kosher salt
- black pepper
- 2/3 Cup Prairie Farms Cultured Whole Buttermilk
- 1 large egg
- 3 Avocados, firm but ripe and cut into wedges
- 2/3 Cup all-purpose flour
Chipotle Lime Sauce
- 1/2 Cup Prairie Farms All Natural Sour Cream
- 1/2 Cup mayonnaise
- 2 Chipotles in adobo, finely chopped
- 1 Fresh Lime, small
- 1 tsp chili powder
- Salt and Black Pepper (for taste)
Directions:
Avocado Fries
- Preheat oven to 400 degrees. Brush baking sheet with 1 tablespoon canola oil. Toss breadcrumbs, chili powder, and remaining canola oil in a shallow bowl until coated. Season with salt and pepper. Whisk together buttermilk and egg in a separate bowl, and place flour in another separate bowl.
- Season avocados with salt and pepper. Take avacado wedges and toss in flour, then in buttermilk mixture (letting excess drip off), and lastly in breadcrumb mixture, pressing gently to help stick coating. Place, rounded side down, on oiled baking sheet. Bake until golden brown, around 28 minutes. Season with salt and pepper.
Chipotle Lime Sauce
- Stir together sour cream, mayonnaise, chopped chipotles, fresh squeezed lime juice, and chili powder. Season with salt and black pepper.
