Instructions
  1. Preheat oven to 375°F
  2. Microwave or bake potatoes just until soft. Allow to cool slightly, then slice potatoes in half lengthwise and scoop out the soft inside, leaving the skins about 1/3" thick.
  3. Deep fry the potato skins until lightly crisp, about 5 minutes. Allow to drain on paper towels. Stuff each of the potato skins with cheese and about 1 tsp. of bacon bits.
  4. Bake for 10 minutes, or until the cheese has melted, on a lightly greased baking sheet.
  5. Top each potato skin with a spoonful of scallions and a dollop of sour cream. Enjoy!
