Instructions
  1. Let ice cream soften outside of freezer for 5 minutes. Break rectangle graham in half.
  2. Spread marshmallow cream on one side of the graham. Sandwich ice cream scoop in between graham squares. Gently press together but do not let graham break. Use a butter knife to smooth ice cream to the edges.
  3. Either enjoy immediately or wrap ice cream sandwich in parchment paper or aluminum foil and store in the freezer. Graham crackers will soften in the freezer.

Rocky road ice cream is the perfect filling for an ice cream smore sandwich. Rocky Road is a classic ice cream flavor made with naturally good ingredients including milk straight from local farms. Rocky Road starts with rich, chocolate ice cream and incorporates a marshmallow swirl and bits of chocolate covered peanuts.
