Twice Baked Mashed Potatoes with Cream Cheese
These twice baked mashed potatoes are ultra-creamy and full of rich, savory flavor from butter, cream cheese, and sour cream. Baked until hot and fluffy, they're a hearty side dish perfect for special meals.
Ingredients:
- 5 lb potatoes
- 2 cups Prairie Farms Half & Half
- 1 cup Prairie Farms Sour Cream
- 1 block Prairie Farms Cream Cheese
- 1 stick Prairie Farms Butter
- 1 tsp salt
- 1 tsp celery salt
- 1 tsp seasoned salt
- 1 tsp onion powder
- 1 tsp pepper
- Paprika
Directions:
- Peel potatoes, then cut into cubes. Place cubed potatoes in stock pot and cover with water.
- Bring water to boil and cook potatoes until they are fork tender.
- Remove from stove and drain. Put cooked potatoes in mixing bowl, along with all ingredients except paprika and 1/4 stick of butter.
- Mash until potatoes are as smooth or lumpy as you like.
- Place in 9" x 11" baking pan. Melt 1/4 stick of butter in microwave, then pour over top of potatoes.
- Sprinkle paprika on top.
- Place in preheated oven at 350 °F for about 45 minutes.
- Remove from oven when they are golden brown on top.
