Twice Baked Mashed Potatoes with Cream Cheese

Ingredients:

  • 5 lb potatoes
  • 2 cups Prairie Farms Half & Half
  • 1 cup Prairie Farms Sour Cream
  • 1 block Prairie Farms Cream Cheese
  • 1 stick Prairie Farms Butter
  • 1 tsp salt
  • 1 tsp celery salt
  • 1 tsp seasoned salt
  • 1 tsp onion powder
  • 1 tsp pepper
  • Paprika

Directions:

  • Peel potatoes, then cut into cubes. Place cubed potatoes in stock pot and cover with water.
  • Bring water to boil and cook potatoes until they are fork tender.
  • Remove from stove and drain. Put cooked potatoes in mixing bowl, along with all ingredients except paprika and 1/4 stick of butter.
  • Mash until potatoes are as smooth or lumpy as you like.
  • Place in 9" x 11" baking pan. Melt 1/4 stick of butter in microwave, then pour over top of potatoes.
  • Sprinkle paprika on top.
  • Place in preheated oven at 350 °F for about 45 minutes.
  • Remove from oven when they are golden brown on top.
