Rum Raisin Fudge
Rum Raisin Fudge is a delicious dessert reminiscent of the fudge store specialty from the family vacations you used to take as a kid. You know the one, where you walk in and smell the fudge.
Ingredients:
- 2 cups sugar
- 1/2 cup Prairie Farms Sour Cream
- 1/4 cup margarine 1 stick
- 12 oz white chocolate chopped
- 7-oz jar marshmallow creme
- 1/2 cup golden raisins
- 1 tsp rum extract
Directions:
- Combine sugar, sour cream and margarine in saucepan. Bring to rolling boil over medium heat, stirring constantly. Boil for 5 minutes, stirring constantly until mixture registers 236 °F on candy thermometer.
- Remove pan from heat and stir in chocolate, marshmallows, raisins and rum extract.
- Beat vigorously for several minutes, until fudge begins to thicken.
- Pour into greased 8" square pan.
- Cool, cut into squares.
