Rum Raisin Fudge

Rum Raisin Fudge is a delicious dessert reminiscent of the fudge store specialty from the family vacations you used to take as a kid. You know the one, where you walk in and smell the fudge.

Tray filled with bite-size pieces of rum-raisin fudge, with serving tongs

Ingredients:

  • 2 cups sugar
  • 1/2 cup Prairie Farms Sour Cream
  • 1/4 cup margarine 1 stick
  • 12 oz white chocolate chopped
  • 7-oz jar marshmallow creme
  • 1/2 cup golden raisins
  • 1 tsp rum extract

Directions:

  • Combine sugar, sour cream and margarine in saucepan. Bring to rolling boil over medium heat, stirring constantly. Boil for 5 minutes, stirring constantly until mixture registers 236 °F on candy thermometer.
  • Remove pan from heat and stir in chocolate, marshmallows, raisins and rum extract.
  • Beat vigorously for several minutes, until fudge begins to thicken.
  • Pour into greased 8" square pan.
  • Cool, cut into squares.
