Festive Shrimp Chowder
This made-from-scratch Festive Shrimp Chowder is the one-pot dinner you need to make. The combination of juicy shrimp, potatoes and pimentos gives this dish a delicious flavor.
Ingredients:
- 3 large potatoes peeled and cubed
- 2 celery stalks chopped
- 1 small onion diced
- 1 large carrot chopped
- 1 4oz jar of diced pimento drained
- 2 cups Prairie Farms Whole Vitamin D Milk
- 1 12oz can evaporated milk
- 1 14.5oz can chicken broth
- 1 15oz can of corn drained
- 1 pound shrimp peeled and deveined
- ¼ cup flour
- 2 Tbsp dried parsley
- 2 tsp old bay seasoning
- ½ tsp paprika
- ¼ tsp ground black pepper
- salt, to taste
- fresh parsley for garnish
Directions:
- In large pan, bring potatoes, celery, onion, and carrot to boil in salted water.
- Reduce heat and cook until vegetables are soft. (do not drain liquid.)
- With hand masher, lightly mash these vegetables while leaving some chunks.
- Add chicken broth and milk, and bring mixture to slow boil.
- In shaker, combine flour and evaporated milk while making sure they are smooth.
- Gradually stir this liquid into potato mixture.
- Add pimento, parsley, old bay, paprika, pepper, and shrimp.
- Bring to boil and simmer for 10 minutes.
- Garnish with fresh parsley.
