Festive Shrimp Chowder

Ingredients:
3
large potatoes
peeled and cubed
2
celery stalks
chopped
1
small onion
diced
1
large carrot
chopped
1
4oz jar of diced pimento
drained

cups
Prairie Farms Whole Vitamin D Milk
1
12oz can evaporated milk
1
14.5oz can chicken broth
1
15oz can of corn
drained
1
pound
shrimp
peeled and deveined
¼
cup
flour
2
Tbsp
dried parsley
2
tsp
old bay seasoning
½
tsp
paprika
¼
tsp
ground black pepper
salt, to taste
fresh parsley for garnish
Directions:
In large pan, bring potatoes, celery, onion, and carrot to boil in salted water.
Reduce heat and cook until vegetables are soft. (do not drain liquid.)
With hand masher, lightly mash these vegetables while leaving some chunks.
Add chicken broth and milk, and bring mixture to slow boil.
In shaker, combine flour and evaporated milk while making sure they are smooth.
Gradually stir this liquid into potato mixture.
Add pimento, parsley, old bay, paprika, pepper, and shrimp.
Bring to boil and simmer for 10 minutes.
Garnish with fresh parsley.
