Festive Shrimp Chowder

Ingredients:

  • 3 large potatoes peeled and cubed
  • 2 celery stalks chopped
  • 1 small onion diced
  • 1 large carrot chopped
  • 1 4oz jar of diced pimento drained
  • 2 cups Prairie Farms Whole Vitamin D Milk
  • 1 12oz can evaporated milk
  • 1 14.5oz can chicken broth
  • 1 15oz can of corn drained
  • 1 pound shrimp peeled and deveined
  • ¼ cup flour
  • 2 Tbsp dried parsley
  • 2 tsp old bay seasoning
  • ½ tsp paprika
  • ¼ tsp ground black pepper
  • salt, to taste
  • fresh parsley for garnish

Directions:

  • In large pan, bring potatoes, celery, onion, and carrot to boil in salted water.
  • Reduce heat and cook until vegetables are soft. (do not drain liquid.)
  • With hand masher, lightly mash these vegetables while leaving some chunks.
  • Add chicken broth and milk, and bring mixture to slow boil.
  • In shaker, combine flour and evaporated milk while making sure they are smooth.
  • Gradually stir this liquid into potato mixture.
  • Add pimento, parsley, old bay, paprika, pepper, and shrimp.
  • Bring to boil and simmer for 10 minutes.
  • Garnish with fresh parsley.
