Creamy Tomato Rigatoni

Ingredients:

  • 8 oz Rigatoni
  • 1 tbsp Extra Virgin Olive Oil
  • 1 Medium Yellow Onion diced
  • 4 Garlic Cloves minced
  • 1 lb Ground Turkey
  • 1 jar (24 oz) Marinara Sauce
  • cup Prairie Farms Lactose-Free Cottage Cheese
  • 1 tsp Kosher Salt
  • 1 tsp Freshly Ground Black Pepper
  • ½ tsp Red Pepper Flakes
  • 1 tsp Italian Seasoning
  • Fresh Basil garnish
  • Fresh Parmesan grated, for garnish

Directions:

  • Cook pasta according to package instructions. Drain out water, then set aside.
  • While pasta is cooking, heat a large skillet over medium heat, then add oil. Once oil is hot, add diced onion and saute until a bit translucent. Add salt, pepper, red pepper flakes, and Italian seasoning. Add garlic and saute until fragrant, about 1-2 minutes.
  • Add ground turkey to skillet and cook until browned and cooked through, breaking apart with a spoon.
  • While the turkey is cooking, add the marinara sauce and cottage cheese into a blender and blend until smooth.
  • Once the turkey is cooked through, pour the sauce over the turkey, add the cooked pasta, and stir. Allow to come to a brisk simmer.
  • Serve and top with fresh parmesan and basil. Enjoy!

Notes

Store leftovers in an airtight container for up to 4 days.
Any type of Prairie Farms Cottage Cheese can be used, but we recommend using our Lactose-Free Cottage Cheese if trying to make the recipe lactose free.
