Hanukkah Latkes with Sour Cream Applesauce Swirl
These Hanukkah latkes are crisp on the outside and tender inside, made from grated potatoes and onion. Served with a swirl of applesauce and sour cream, they're a classic holiday favorite.
Ingredients:
- 3 large russet potatoes peeled
- 1 small sweet yellow onion peeled
- 2 large eggs
- 2 Tbsp flour
- 1 tsp salt
- vegetable oil, enough to fill your frying pan 1/2"
- 2 cups applesauce
- 1 cup Prairie Farms Sour Cream
Directions:
- Grate potatoes and onion into large bowl. Drain any excess liquid.
- Add eggs, flour and salt to bowl and stir to combine.
- Heat oil in large frying pan over medium-high heat. Oil is ready when drop of latke batter sizzles.
- Use 1/4-cup measuring cup to scoop latke batter into hot oil.
- Use spatula to slightly flatten each latke.
- Cook until brown and crispy, about 5 minutes, and then flip latkes.
- Cook until second side is also brown and crispy, about 5 more minutes.
- Remove cooked latkes to paper towel lined plate to drain.
- Place applesauce in medium serving bowl.
- Place sour cream in small plastic zip-top bag and cut off small corner.
- Starting at center of bowl, create sour cream spiral on top of applesauce by squeezing bag slowly and rotating bowl.
- Serve bowl of sour cream applesauce swirl on large serving platter with warm fried latkes.
- Yield: 8 latkes
