Ingredients:

Peanut Butter Filling

  • 8 oz Prairie Farms Cream Cheese softened
  • ½ cup creamy peanut butter
  • ½ cup granulated sugar
  • 1 large egg
  • ½ teaspoon pure Vanilla extract

Muffins

  • ½ cup vegetable oil canola or avocado oil works too
  • 1 cup granulated sugar
  • ½ cup Prairie Farms Chocolate Peanut Butter Cup Milk
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ⅔ cup Prairie Farms Sour Cream
  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • 1 ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups semisweet chocolate chips or chunks leave ½ cup for topping

Directions:

  • Preheat oven to 350 degrees and line muffin tin with cupcake liners (or lightly grease and flour).
  • In microwave safe bowl, microwave cream cheese and ½ cup peanut butter together in 10 second intervals until it stirs and combines easily.
  • Add ½ cup sugar, 1 egg, and ½ teaspoon vanilla. Whisk all together until smooth then set aside.
  • In separate large bowl, whisk together ½ cup oil, 1 cup sugar, and ½ cup Prairie Farms Chocolate Peanut Butter Cup Milk. Stir in 2 eggs and 1 teaspoon vanilla until combined. Add ⅔ cup sour cream and whisk into mixture.
  • In separate, medium bowl, whisk together 2 cups flour, ½ cup cocoa powder, 1 ½ teaspoon baking soda and ½ teaspoon salt.
  • Add flour mixture into wet mixture and slowly fold together until almost combined.
  • Add 1 ½ cups chocolate chips or chunks and fold into batter.
  • Scoop some chocolate muffin batter into each muffin cup about ½ way full. Next spoon heaping spoonful of the peanut butter mixture over chocolate batter in each cup.
  • Finish with topping each muffin cup with chocolate batter over peanut butter layer. Each muffin should be filled to the top.
  • Top each muffin with few chocolate chips/chunks.
  • Bake at 350 degrees 22-25 minutes (toothpick inserted in center should come out mostly clean)
  • Set aside to cool before serving.
