½cupPrairie Farms Chocolate Peanut Butter Cup Milk
2large eggs
1teaspoonpure vanilla extract
⅔cupPrairie Farms Sour Cream
2cupsall-purpose flour
½cupcocoa powder
1 ½teaspoonbaking soda
½teaspoonsalt
2cupssemisweet chocolate chips or chunksleave ½ cup for topping
Directions:
Preheat oven to 350 degrees and line muffin tin with cupcake liners (or lightly grease and flour).
In microwave safe bowl, microwave cream cheese and ½ cup peanut butter together in 10 second intervals until it stirs and combines easily.
Add ½ cup sugar, 1 egg, and ½ teaspoon vanilla. Whisk all together until smooth then set aside.
In separate large bowl, whisk together ½ cup oil, 1 cup sugar, and ½ cup Prairie Farms Chocolate Peanut Butter Cup Milk. Stir in 2 eggs and 1 teaspoon vanilla until combined. Add ⅔ cup sour cream and whisk into mixture.
In separate, medium bowl, whisk together 2 cups flour, ½ cup cocoa powder, 1 ½ teaspoon baking soda and ½ teaspoon salt.
Add flour mixture into wet mixture and slowly fold together until almost combined.
Add 1 ½ cups chocolate chips or chunks and fold into batter.
Scoop some chocolate muffin batter into each muffin cup about ½ way full. Next spoon heaping spoonful of the peanut butter mixture over chocolate batter in each cup.
Finish with topping each muffin cup with chocolate batter over peanut butter layer. Each muffin should be filled to the top.
Top each muffin with few chocolate chips/chunks.
Bake at 350 degrees 22-25 minutes (toothpick inserted in center should come out mostly clean)
