Hanukkah Latkes with Sour Cream Applesauce Swirl

These Hanukkah latkes are crisp on the outside and tender inside, made from grated potatoes and onion. Served with a swirl of applesauce and sour cream, they're a classic holiday favorite.

Ingredients:

  • 3 large russet potatoes peeled
  • 1 small sweet yellow onion peeled
  • 2 large eggs
  • 2 Tbsp flour
  • 1 tsp salt
  • vegetable oil, enough to fill your frying pan 1/2"
  • 2 cups applesauce
  • 1 cup Prairie Farms Sour Cream

Directions:

  • Grate potatoes and onion into large bowl. Drain any excess liquid.
  • Add eggs, flour and salt to bowl and stir to combine.
  • Heat oil in large frying pan over medium-high heat. Oil is ready when drop of latke batter sizzles.
  • Use 1/4-cup measuring cup to scoop latke batter into hot oil.
  • Use spatula to slightly flatten each latke.
  • Cook until brown and crispy, about 5 minutes, and then flip latkes.
  • Cook until second side is also brown and crispy, about 5 more minutes.
  • Remove cooked latkes to paper towel lined plate to drain.
  • Place applesauce in medium serving bowl.
  • Place sour cream in small plastic zip-top bag and cut off small corner.
  • Starting at center of bowl, create sour cream spiral on top of applesauce by squeezing bag slowly and rotating bowl.
  • Serve bowl of sour cream applesauce swirl on large serving platter with warm fried latkes.
  • Yield: 8 latkes
