Instructions
  1. Let carton of ice cream soften for about 5 minutes on counter. Scoop ice cream into 3 inch balls.
  2. Place one scoop of ice cream on top of one chocolate chip cookie, then place the other cookie on top. Gently press together so ice cream flattens, being careful not to break cookies. Use a butter knife to smooth ice cream around edges.
  3. Sprinkle sides of ice cream sandwich with chocolate shavings to garnish.
  4. Serve immediately or wrap ice cream sandwiches in parchment paper or aluminum foil and store in freezer.

Recipe Notes

These ice cream sandwiches are quick and easy to assemble and are best when made with crispy chocolate chip cookies, store-bought or homemade. If  you like a softer cookie sandwich, try freezing them first. The ice cream softens the cookies while they set.
