Ingredients:

  • 2 cup Prairie Farms Cottage Cheese
  • 2 tsp Kosher Salt
  • 2 cup Self-Rising Flour
  • 1 Egg
  • Everything Bagel Seasoning optional, for topping
  • Cinnamon Sugar optional, for topping
  • Asiago Cheese optional, for topping
  • Flaky Salt optional, for topping

Directions:

  • Preheat oven to 375ºF. Line a large baking sheet with parchment paper. Set aside.
  • In a blender or food processor, blend cottage cheese with salt until completely smooth.
  • Add flour to a large mixing bowl. Add blended cottage cheese, mix until a shaggy dough has formed.
  • Turn dough out onto a floured surface and knead until smooth, about 5 minutes, adding more flour as needed if the dough is too sticky.
  • Divide the dough into about 16 golf ball-sized pieces of dough, rolling each into a ball. Poke a hole in the middle of the dough balls with your finger, gently stretching the dough into a circle with about an inch hole in the middle.
  • Place all dough bagels onto prepared baking sheet, about 3-inches apart. In a small bowl, whisk the egg until smooth. Brush onto the top of each bagel. Add desired toppings if using. Bake for 25 minutes, until golden brown and risen. Cool slightly then enjoy!
