Parmesan Spinach Artichoke Dip

Spinach dip in a white dish with toasted bread wedges on a serving tray

Ingredients:

  • 10 oz pack of frozen spinach thawed and squeezed dry
  • 2-3 garlic cloves, finely minced (or ½-¾ tsp powdered)
  • ½-1 can artichoke hearts drained and chopped
  • 1½ plus ½ cup of shredded parmesan cheese
  • 1 cup Prairie Farms Sour Cream
  • 1 cup mayonnaise
  • 1 tbsp lemon juice
  • ¼ tsp cayenne pepper

Directions:

  • In large bowl, combine all ingredients except spinach and ½ cup of parmesan cheese.
  • Mix well.
  • Shred spinach into mixture and stir to combine.
  • Spray 2 quart baking dish with cooking spray.
  • Place mixture into dish and bake at 375 degrees for 25 minutes.
  • Top with ½ cup of parmesan cheese and bake for 5 minutes more or until cheese is melted.
  • Serve hot. (reheats well in microwave. Just add tad of water.)
