Mom's Cinnamon Coffee Cake

Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup Prairie Farms Butter or margarine
  • 1 egg
  • 1 cup Prairie Farms Buttermilk
  • 2 cups sifted flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • Crumbs for topping:
  • 1 cup packed brown sugar
  • 2 tbsp flour
  • 3 tbsp melted Prairie Farms Butter
  • 1 tsp cinnamon

Directions:

  • Cream butter and sugar, then add egg. Add dry ingredients alternately with buttermilk and soda.
  • Pour half of batter into greased pan and sprinkle with half of crumbs. Then put remaining batter on top and top with remaining crumbs.
  • Bake in 8" x 12" pan in 350 °F oven for 30 min or longer.
  • Crumbs for Topping: Mix together
