Farm Fresh Mac and Cheese

Ingredients:

Macaroni

  • 2-1/2 cups elbow macaroni

Sauce

  • 4 tbsps Prairie Farms Butter or margarine
  • 1/4 cup flour
  • 1 tsp salt
  • 1 tsp sugar
  • 2 cups Prairie Farms Whole Vitamin D Milk
  • 8 oz American cheese cubed
  • 1-1/3 cups cottage cheese
  • 2/3 cup Prairie Farms Sour Cream
  • 2 cups (8 oz) shredded sharp cheddar cheese

Topping

  • 1-1/2 cups soft bread crumbs
  • 2 tbsp melted Prairie Farms Butter or margarine

Directions:

  • Cook macaroni according to package directions; drain.
  • Place in greased 2-1/2-quart casserole dish.
  • In saucepan, melt 4 tbsp butter. Stir in flour, salt and sugar until smooth.
  • Gradually stir in milk.
  • Bring to boil, cooking and stirring for 2 minutes, or until thickened.
  • Reduce heat; stir in American cheese until melted.
  • Stir in cottage cheese and sour cream.
  • Pour sauce over macaroni in casserole dish and stir once or twice.
  • Sprinkle top with shredded cheddar cheese.
  • Toss bread crumbs with 2 tbsp of melted butter and sprinkle over top.
  • Bake, uncovered, at 350 °F for 30 minutes, or until topping is golden brown.
