Creamy Mashed Potatoes with Cottage Cheese and Cream Cheese

Ingredients:

  • 3 lbs Russet Potatoes
  • 1 tbsp Kosher Salt divided (plus more to taste)
  • 1 cup Prairie Farms 4% Small Curd Cottage Cheese
  • ΒΌ cup Prairie Farms Whole Milk warm
  • 6 tbsp Prairie Farms Unsalted Butter softened
  • 4 tbsp Prairie Farms Cream Cheese softened
  • freshly cracked Black Pepper and chopped Chives for serving (optional)

Directions:

  • Wash and peel potatoes, then cut into 1” pieces.
  • Place potatoes in large pot, cover with about 1” of cold water. Add two teaspoons of kosher salt and bring to a boil. Boil potatoes for about 15 minutes, or until a fork can easily pierce them.
  • While the potatoes boil, blend cottage cheese and warm milk in a blender, food processor, or with an immersion blender until smooth. Set aside.
  • Drain potatoes well and return to pot. Add remaining salt and softened butter. Mash potatoes with a potato masher or ricer until smooth.
  • Stir in blended cottage cheese and softened cream cheese until creamy and well combined.
  • Taste and add more salt as needed. Serve hot with freshly cracked black pepper or chopped chives, if desired.
