These classic no-bake cookies are rich and chocolatey with creamy peanut butter and hearty oats, all made on the stovetop with no oven required. Perfect for a quick dessert or nostalgic sweet treat.
Place butter, sugar, milk, and unsweetened cocoa powder in saucepan and heat over medium heat, making sure to stir often until butter is melted and everything is well combined.
Bring mixture to rolling boil and allow to boil for 60 seconds (make sure to set timer!), stirring occasionally.
Remove from heat, and stir in peanut butter and vanilla extract until fully combined.
Stir in oats and mix until all of oats are coated with mixture and everything is well combined.
Drop spoonfuls of mixture onto prepared baking sheets (I like to use 2 tbsp. cookie scoop).
Allow to cool for 20-30 minutes, serve, and enjoy with cold glass of milk or eggnog sprinkled with cinnamon.
