Directions:
In a small pot, whisk together sugar, cocoa powder, and salt. Add heavy cream and corn syrup, whisk until smooth. Add chopped chocolate.
Add pot to a stove over medium-high heat. Stir until the mixture comes to a boil.
Reduce temperature to medium-low so the mixture is a vigorous simmer. Simmer until the mixture splits, this could take about 10 minutes.
Remove the pot from heat and add to a medium-sized bowl. Add butter, water, and vanilla. Whisk until the mixture comes back together and is smooth and glossy.
Serve warm over Vanilla Ice Cream. Store in a jar in the fridge for up to 3 weeks.
