Football Brownies

Ingredients:

  • 6 oz Semi-Sweet Chocolate roughly chopped
  • ½ cup Prairie Farms Unsalted Butter
  • 1 tsp Espresso Powder
  • ¼ cup Prairie Farms Premium Chocolate Milk
  • 2 Eggs room temperature
  • ½ cup Granulated Sugar
  • ¼ cup Brown Sugar
  • 1 tsp Kosher Salt
  • 1 cup All-Purpose Flour
  • 3 tbsp Unsweetened Cocoa Powder
  • Flaky Sea Salt to taste, optional

Buttercream Frosting

  • 1 cup Powdered Sugar
  • ½ cup Prairie Farms Butter softened
  • ½ tsp Kosher Salt
  • 2 tbsp Prairie Farms Heavy Cream

Directions:

Brownies

  • Preheat oven to 350ºF. Prepare a square baking dish by coating generously with butter. Set aside.
  • In a small pot over medium heat, add chocolate and butter. Allow butter and chocolate to melt, stirring often to avoid scalding. Once melted, stir in espresso powder and chocolate milk until mixture is smooth and shiny. Remove from heat and set aside.
  • In a large bowl, add eggs, sugar, and salt. Using an electric mixer, beat until the mixture is voluminous and a very pale yellow color. Mix in flour and cocoa Powder.
  • While beating on low speed, slowly stream in the chocolate and butter mixture. Beat until fully incorporated, scraping down the sides of bowl as needed.
  • Add batter to prepared pan and spread into an even layer using an offset spatula. Sprinkle flaky salt on top to taste. Bake in the middle rack of the oven for 16-20 minutes, until edges have fully set with a soft center. Remove from oven and let cool, at least 15 minutes.

Buttercream Frosting

  • While brownies are cooling, make buttercream frosting. Add butter, powdered sugar, and salt to a large bowl. Beat with an electric mixer, starting at low speed.
  • Once powdered sugar is incorporated, increase the speed to medium-high and add 1-2 tablespoons of heavy cream. Continue to whip mixture until frosting is very light and fluffy.

Assemble

  • Cut brownies into football shapes using a football-shaped cookie cutter or a pairing knife. Add to serving platter of your choice.
  • Add frosting to a piping bag and snip off the very end. Pipe laces on top of each football brownie. Enjoy!
