Cool Summer Recipes
Super Chill Strawberry Banana Smoothie
- 1 fresh banana
- 2 cups frozen strawberries
- 1 cup Prairie Farms Cupcake Classics Strawberry Banana Milk
- 1/2 cup plain yogurt
- 2 tablespoons Honey
Put all ingredients into a blender and pulse mix until smooth.
Triple Threat Dark Chocolate Truffle Pudding
- 1 1/2 cups Sugar
- 3/4 cup cocoa powder
- 1/2 cup cornstarch
- 1/8 tsp. kosher salt
- 4 cups Prairie Farms Cupcake Classics Chocolate Truffle Milk
- 2 cups Prairie Farms Half & Half
- 3 ounces bittersweet chocolate
- 1 Tbsp. vanilla extract
- Prairie Farms Whipping Cream
In a mixing bowl, mix together sugar, cocoa, cornstarch and salt. Whisk in Cupcake Classics Chocolate Truffle Milk slowly. Next, slowly whisk in half and half until smooth.
Pour mixture through a fine sieve into a saucepan. Cook on medium heat, whisking constantly. Bring to a boil, and boil gently for 2 minutes. Turn off heat, then stir in bittersweet chocolate and vanilla.
Fill individual pudding cups or ramekins and refrigerate about an hour. Prepare whipping cream according to carton instructions and dollop on top just before serving.
"Very Vanilla" Pancakes
- 2 cups whole wheat flour
- 2 tsp. baking powder
- 1 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1 cup Prairie Farms Cupcake Classics Very Vanilla Milk
- 1 5.3oz container, Prairie Farms Vanilla Greek Yogurt
- 1 Tbsp. vanilla extract
- 1 1/2 Tbsp. honey
In a mixing bowl, mix together flour, baking powder, cinnamon and salt.
Whisk in Cupcake Classics Very Vanilla Milk, Greek yogurt, vanilla and honey until smooth.
Set electric griddle to 300 degrees. Pour pancake mixture onto hot griddle in small circles. Cook until bubbly, then turn over. Cook for approximately another 30-60 seconds. Remove from griddle.
Serve with your favorite topping, fresh berries and Prairie Farms real butter. Makes about 16 pancakes.
